A few posts back, I put a call out for help. Amazingly, a few people have been in touch, offering skills that we undoubtedly need, which I definitely don’t have, in creating a successful coffeehouse.
One of these is in-depth knowledge of how to create the perfect espresso. So we have a new member of the team who is a self confessed coffee geek who is helping me out in this area. We are having lots of fun over Whatsapp and email with updates in espresso machine sourcing, photos of inspiring latte art and of course, the perfect espresso.
Last week, he sent me a message that he was in a cafe I was yet to try, naming it would be unfair, but they were definitely on my list as they advertise themselves as being at the top of their game regarding coffee.
And then the text arrived; “Don’t bother … Just got a latte… Rubbish”

In that instance, my desire to go there was quashed and my custom remains elsewhere. And it got me thinking.. if we are selling ourselves as a good place for coffee, we really have to be creating fabulous espresso based drinks every single time. I knew that the high pressure in the espresso machine was a necessity in this business, but I hadn’t quite realised the pressure we would all be under each time we pressed that button too….

It’s tricky – I’m a self-confessed coffee geek and definitely have my favourite places around Leeds to go for a good coffee, but have had ‘off days’ from all of them, without exception. I wouldn’t count out a cafe on the strength of a single latte!
Are you focusing on espresso-based drinks? What about brewed/pour-over/aeropressed? Looking forward to hearing more about this new venture! 🙂

At the moment we are focussing on sourcing an espresso machine, but we are very keen to include lots of different types of methods – including traditional Ethiopian coffee rituals from our friends in Harehills with this background! Re aeropress and other methods – happy to learn from you if this is an area you can help with?!
